Half Hour Gingerbread

2 tablespoons margarine
¼ cup sugar
1 egg
½ cup molasses
1 ½ cup Balmoral wheat flour
¾ teaspoon baking soda
½ teaspoon cinnamon
1 teaspoon ginger
1/8 teaspoon cloves
½ teaspoon salt
½ cup hot water

Cream margarine, add sugar, beat in egg and add molasses. Stir in dry ingredients. Add ½ cup of hot water. Pour into 9 x 12 greased pan. Bake at 350 for 20 minutes. Serve warm with whipped cream.
 

Buckwheat Porridge

3 cups of milk
½ cup Balmoral buckwheat
¾ teaspoon salt

Bring 3 cups of milk to boiling point. In a small bowl mix buckwheat flour, salt with ½ cup of cold milk. Add this mixture to scalded milk, stirring constantly. Cook for 8 to 10 minutes. Makes 4 servings.
 

Quick Cake

1 cup all purpose flour
1 cup Balmoral wheat flour
¾ cup sugar
½ teaspoon salt
3 teaspoon baking powder
2 tablespoon soft margarine
¾ cup milk
1 teaspoon vanilla
1 egg

Combine dry ingredients. Add egg, margarine, milk and vanilla. Beat all together for 2 minutes. Pour into a 9 x 12 greased baking pan. Bake at 350 for 20 to 25 minutes. Serve with strawberries and whipped cream. Add 1 cup of blueberries to the mixture for blueberry cake.
 

Cape Breton Rolled Oatcakes

3 cups Balmoral oatmeal
3 cups all purpose flour
1 ½ cups lard (or part butter)
1 teaspoon soda
¾ cup cold water

Combine dried ingredients. Work in lard with fingers. Add a little water at a time until dough is right to roll. Use oatmeal on board instead of flour. Cut in squares, bake in a moderate oven, 350 degrees for about 15 minutes.

 

Overnight Oatmeal Cakes

2 cups coarse oatmeal
1 cup flour
¾ teaspoon salt
½ teaspoon salt
1 cup brown sugar
1 cup shortening
1 egg

Mix dry ingredients together. Rub in 1 cup of shortening. Add 1 beaten egg. Mix together and shape into rolls, wrap in waxed paper. Let stand overnight in refrigerator. Slice in the morning and bake in 350 degree oven for 15 minutes.

 

Spicy Oatmeal Muffins

1 cup flour
1/3 cup sugar
½ teaspoon salt
4 teaspoons baking powder
¼ teaspoon allspice
¼ teaspoon cloves
1/3 cup shortening
1 egg beaten
1 cup rich milk
1 1/3 cups Balmoral oatmeal firmly packed

Preheat oven to 450. Sift flour, sugar, salt, baking powder and spices into a bowl and mix. Cut in the shortening until the mixture is like coarse crumbs. Mix in egg and milk. Add oatmeal, mix well but do not beat. Fill greased muffin tins 2/3 full. Bake at 400 degrees for 24-26 minutes or until done.
